Keto Chicken Nuggets w/UnFries

Make these Low-Carb, Keto Chicken Nuggets for a healthier low-carb lunch for yourself and the kids. This simple dish is low-carb, delicious, and nutritious!

Ingredients


Chicken nuggets

3 lbs boneless chicken thighs cut into bite size pieces

8 oz. parmesan cheese, shredded

2 tsp onion powder

½ tsp salt

½ tsp ground black pepper

2 eggs

2 tbsp coconut oil (flavorless)

Green Bean Fries

15 oz. fresh green beans, trimmed

2 tbsp coconut oil (flavorless)

salt

Directions


In a medium-sized bowl, combine the parmesan, onion powder, salt and pepper. Mix well.In another bowl, add the egg and whisk until frothy. Dip the chicken pieces in the egg, making sure to cover them completely. Coat the chicken pieces in the parmesan mixture and shake off any excess. In a large skillet over medium heat, melt the coconut oil. Fry the chicken nuggets 5 minutes per side until golden brown and cooked through.

Green bean fries: Heat up a large skillet and fry the trimmed beans for a couple of minutes. They should still be crispy! Season with salt before serving.
